Course: Appetizer
Cuisine: American-inspired

Ingredients

  • 2 medium yellow onions thinly sliced (about 3 cups)
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup sour cream
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper

Equipment

  • heavy skillet
  • spatula
  • bowl

Method

  1. Heat olive oil and butter in a heavy skillet over medium-low heat. Add onions and cook 25–30 minutes, stirring often, until deep golden; lower heat if they brown too fast.
  2. Spread onions on a plate and cool completely before mixing with dairy.
  3. Stir sour cream, Greek yogurt, thyme, salt and pepper in a bowl, then fold in cooled onions.
  4. Cover and chill at least 30 minutes before serving.

Notes

  • Do not rush the onions on high heat; a long gentle cook delivers the sweetness.
Storage: Keep refrigerated and use within 3 days. Refrigerate within 2 hours of serving.
Serving pairing: Serve with ridged potato chips and crisp vegetables.
